Rajendra serves authentic Indian food in Northern Norway
Meet the skilled head chef at Indie.
We meet the passionate Indian head chef Rajendra Singh in the atmospheric rooms of the restaurant Indie at Grønnegata 39.
-I have lived here for a year, and exciting opportunities opened up in a new place, smiles Rajendra Singh.
He is originally from northern India, from a city called Dehradun, with more than one million inhabitants.
A great contrast
The contrast with Northern Norway is of course great, but so far he is enjoying it.
-I am very happy with the quiet city, the northern lights, the midnight sun and the dynamic culture, says Singh.
After completing his three-year education in culinary arts, he has worked in places such as India, West Africa, Hungary, Sweden and Denmark.
In Tromsø he works on combining Northern Norwegian and local ingredients with Indian and authentic flavours. A challenge he finds exciting.
-Indian food is known for rich flavours, varied ingredients and intricate cooking methods. Aroma, balance of flavours, the combination of ingredients and spices.
He has lived in Scandinavia for some years and has come to know the culture.
-I am deeply committed because I have worked with Indian food for so many years, especially in a Scandinavian country. I have come to understand a little of what people like, and I try to give guests authentic Indian flavours.
He is glad to help bring a little global flavour to the emerging Arctic metropolis of Tromsø.
-Food lets us learn about different cultures and different ways of doing things. It gives us a chance to share and talk with friends and family. We can learn a lot about their culture and society.
